Sweet Potato Waffles

Waffles are so fun, but they are usually full of sugar, gluten and topped with more sugar and gluten. There are so many healthier, plant based ingredients to use! When baking, instead of using an egg mix 1 tablespoon ground flaxseed and 3 tablespoons water until combined. Switch out cows milk for a plant based nut milk, white or whole wheat flour for ground oats or ground almonds.

I have adapted another amazing waffle recipe from Whitney English! This recipe is gluten free, dairy free, vegan.


  • 1½ cooked medium sweet potato

  • 1 cup rolled oats

  • 2 teaspoons baking powder

  • 1 teaspoon cinnamon

  • 2 tablespoons coconut sugar

  • 1 tablespoon ground flaxseed

  • 3 tablespoons water

  • ¾ cup nut milk

  • 1 tablespoon olive oil

  • 1 tablespoon vanilla

Top with fruit, coconut cream or pure maple syrup.


  1. Cook sweet potatoes - either roasting for 45 minutes at 400 degrees

  2. Place all dry ingredients in a food processor oats, baking powder, cinnamon, coconut sugar and pour into a mixing bowl.

  3. Process wet ingredients sweet potato, 1 tablespoon ground flaxseed, 3 tablespoons water, oil, milk, vanilla in a food processor

  4. Pour wet ingredients into the bowl with dry, and mix until just incorporated.

  5. Pour batter into the pre-oiled iron. Cook according to waffle iron directions.

  6. Top waffles and enjoy!
